THE DOUBLE CHOC AND COFFEE CUPCAKES INSPIRED BY THE SQUID GAME

We made our own version of cupcakes inspired by the squid game, using our mocha flavour. We sent the recipe to our newsletter subscribers last year, and now it is for everyone to try! Let us if you get to try it.


For the frosting

  • 2 tbsp hot water

  • 2 tbsp instant coffee

  • 2 tbsp sugar

  • 8 oz cream cheese at room temperature

  • 1/4 cup sugar

  • 1/4 cup powdered sugar

  • 2 tsp vanilla extract

For the cupcakes

  • 1 pack of Yvette's chocolate coffee mocha bars (into chunks)

  • 3/4 cup all purpose flour

  • 3/4 cup sugar

  • 1 tsp baking powder

  • 1/2 tsp baking soda

  • 6 tbsp unsweetened cocoa powder

  • 3 tbsp hot water

  • 3 tbsp melted butter

  • 6 tbsp buttermilk

  • 1 egg

  • 1 egg white



Method

To make the frosting

  • In a bowl combine the hot water, instant coffee and sugar.

  • With a hand held mixer, whisk the ingredients until they become liht and creamy, about 10 minutes.

  • In another bowl using the same mixer and attachments, whisk the cream cheese and sugar until combined.

  • Add the whipped coffee cream and whisk on medium until combined. Scrape down the bowl and whisk again.

  • Add the powdered sugar and vanilla and mix. Set aside in the fridge until ready to use.

To make the cupcakes

Preheat the oven to 180C. Line a cupcake pan.

  • In a bowl combine the flour, sugar, chocolate chunks, baking powder and baking soda together.

  • In another bowl combine the water and cocoa powder together with a hand whisk until it forms a paste.

  • Add the butter, buttermilk, egg and egg white and whisk together.

  • Add the flour mixture and on low speed whisk until a thick batter forms.

  • Pour the batter into the prepared pan.

  • Bake in the oven for 24 minutes then let cool before frosting.

  • Once frosted keep in the fridge until you need to eat them.


We added some Dalgona biscuits, you do not have to, but if you want to have a go, just google Dalgona candy. It is not as easy as it looks!
